  • 218g (1 ¾ cups) all-purpose flour
  • 2 ½ teaspoon instant espresso powder
  • ½ tsp ground cinnamon
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 170g (1 cup) white chocolate chips

Instructions

  1. Toast the unsalted butter in a saucepan over medium heat until golden brown.
  2. Preheat your oven to 350°F (180°C) and line a cookie sheet with parchment paper.
  3. In a small bowl, whisk together flour, espresso powder, cinnamon, baking powder, baking soda, and salt.
  4. In a large bowl, mix the cooled brown butter with sugars, vanilla extract, and egg until well combined.
  5. Gradually stir the dry ingredients into the wet mixture until just combined; fold in white chocolate chips.
  6. Shape dough into balls using about 1½ tablespoons per cookie and space them 2 inches apart on the baking sheet.
  7. Bake for 9-11 minutes until puffed and slightly golden; let cool for 5 minutes before transferring to a cooling rack.
