  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper
  • 1 zucchini, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup baby spinach, chopped
  • 1 cup mushrooms, sliced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup tomato sauce
  • 1/2 cup Greek yogurt
  • 1/2 teaspoon red pepper flakes
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup fresh parsley or basil, chopped

Instructions

  1. Cook quinoa: Bring vegetable broth to a boil in a saucepan, add quinoa, cover, simmer for 12-15 minutes until liquid is absorbed. Fluff and set aside.
  2. Sauté veggies: Heat olive oil in a skillet, add onion and garlic, cooking until fragrant. Stir in bell pepper, zucchini, mushrooms, and cherry tomatoes; cook until softened. Add spinach and seasonings, then remove from heat.
  3. Mix sauce: In a bowl, combine tomato sauce, Greek yogurt, and red pepper flakes.
  4. Combine: Preheat oven to 375°F (190°C). Mix cooked quinoa with sautéed vegetables and sauce in a baking dish.
  5. Top: Sprinkle mozzarella and Parmesan cheese over the mixture. Cover with foil and bake for 20 minutes; remove foil and bake for another 10 minutes until bubbly.
  6. Serve: Allow to cool slightly before garnishing with fresh herbs.
