  • 1 tbsp oil
  • 1 onion (diced)
  • 3 garlic cloves (minced)
  • 2 stalks celery (diced)
  • 2 medium carrots (diced)
  • 2 pounds potatoes (chopped)
  • 4 cups vegetable broth
  • Salt and pepper (to taste)

Instructions

  1. Heat oil in a large pot over medium heat. Sauté diced onion for about three minutes until soft. Add minced garlic, celery, carrots, potatoes, and spices; sauté for another minute.
  2. Pour in vegetable broth and optional bay leaves. Bring to a boil, then reduce heat and let simmer for about 20 minutes until veggies are tender.
  3. Carefully blend half of the soup until smooth using an immersion blender or regular blender (in batches).
  4. Return blended soup to pot, stir in dairy-free cream or coconut milk, and let simmer together for a few more minutes. Adjust seasonings as needed.
  5. Serve hot, garnished with fresh parsley or sliced vegan sausage if desired.
