  • ½ pound turkey strips (cut into small dice)
  • 3 medium shallots (halved and thinly sliced)
  • 1 teaspoon Dijon mustard
  • 16 ounces frozen peas
  • 1 pear (diced)
  • 1 lemon (zested and juiced)
  • ½ cup roughly chopped parsley
  • Freshly ground black pepper (to taste)

Instructions

  1. Prep the pear by peeling, dicing, and tossing it with lemon juice.
  2. In a skillet over medium heat, cook the turkey strips until golden brown. Remove and drain excess fat.
  3. Sauté shallots in the same pan for about a minute; stir in Dijon mustard.
  4. Add frozen peas and prepared pears; mix well and heat for about five minutes.
  5. Stir in half of the turkey strips, parsley, and black pepper just before serving.
