  • 1 cup brown sugar
  • ½ cup heavy cream (or milk)

  • 1 cup chopped pecans
  • 34 cups mini vegan marshmallows

Instructions

  1. Cook the sweet potatoes in boiling water until tender or use a slow cooker/Instant Pot for softer results.
  2. Preheat your oven to 375°F (190°C). Mash the cooked sweet potatoes until slightly textured, then mix in eggs, vanilla extract, melted butter, brown sugar, salt, and heavy cream until well combined.
