  • 10 mini pumpkins
  • 1 lb ground beef
  • 1 can (15 oz) pumpkin puree
  • 1 large yellow onion, diced
  • 2 garlic cloves, minced
  • 6 tbsp olive oil
  • Salt and pepper to taste
  • Pumpkin pie spice and fresh herbs (thyme, oregano, sage)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse and dry the mini pumpkins, cut off their tops, and scoop out the seeds.
  3. In a pan over medium heat, heat 3 tablespoons of olive oil. Sauté the onion and garlic until fragrant.
  4. In a bowl, combine the ground beef, pumpkin puree, sautéed onion and garlic, spices, salt, and pepper; mix well.
  5. Grease a baking dish with olive oil. Place pumpkins upright and fill them with the stuffing mixture.
  6. Roast in the preheated oven for 30-35 minutes until tender.
  7. Remove from oven and serve hot.
