  • 1 cup fresh spinach, chopped
  • 1/2 cup ricotta cheese
  • 1/2 cup mozzarella cheese, shredded
  • 1/4 cup sun-dried tomatoes, chopped
  • 2 cloves garlic, minced
  • 1 1/2 pounds flank steak
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste

Instructions

  1. Sauté minced garlic in olive oil until fragrant. Add chopped spinach and cook until wilted.
  2. In a bowl, combine sautéed spinach with ricotta cheese, mozzarella cheese, sun-dried tomatoes, salt, and pepper.
  3. Butterfly the flank steak to create a pocket and season it with olive oil, oregano, basil, salt, and pepper.
  4. Spread the filling over one half of the steak and fold it over. Secure with kitchen twine or toothpicks.
  5. Sear the stuffed steak in an oven-safe skillet before transferring it to a preheated oven at 375°F (190°C) for 20-25 minutes.
  6. Let rest for 10 minutes before slicing.
