  • 1/2 cup fresh parsley, packed
  • 1/4 cup fresh cilantro
  • 1 tablespoon fresh oregano (or basil)
  • 2 tablespoons fresh lemon juice
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons apple vinegar (or apple cider vinegar)
  • 2 cloves garlic, minced
  • 1/2 teaspoon chili flakes (optional, for heat)
  • 2 large sweet potatoes, peeled and cut into chunks
  • 1/4 cup unsalted butter (or olive oil for dairy-free)
  • 1/2 cup heavy cream or coconut milk (for a dairy-free option)
  • 1/4 teaspoon cinnamon (optional, for extra flavor)

Instructions

  1. Prepare the sweet potatoes by peeling and chopping them into chunks. Boil until tender, about 15 minutes.
  2. While the sweet potatoes cook, blend parsley, cilantro, lemon juice, olive oil, garlic, salt, and pepper in a food processor to make the green sauce.
  3. Season the steaks with salt and pepper. Heat olive oil in a skillet over medium-high heat and cook steaks for 4-5 minutes on each side for medium-rare.
  4. Drain sweet potatoes and mash them with butter (or olive oil), cream (or coconut milk), salt, and pepper until smooth.
  5. Plate the steak alongside the mashed sweet potatoes and drizzle generously with green sauce.
