  • 4 large organic sweet potatoes
  • 23 tablespoons extra virgin olive oil
  • 1/2 cup almond milk
  • 1/3 cup organic brown sugar
  • 1/4 cup pure maple syrup
  • 1 cup organic raisins
  • 2 cups vegan marshmallows
  • 1 1/2 cups raw pecans

Instructions

  1. Peel and cube sweet potatoes, boil until fork-tender (15-20 minutes), then drain.
  2. Mash sweet potatoes in a bowl, mix in olive oil, almond milk, vanilla extract, brown sugar, cinnamon, nutmeg, and allspice until smooth.
  3. Fold in soaked raisins and half of the vegan marshmallows.
  4. Preheat oven to 350°F (175°C). Spread mixture into a greased baking dish, top with remaining marshmallows and raw pecans.
  5. Bake for 45 minutes until bubbly and golden. Drizzle with maple syrup before serving.
