  • 1 1/2 cups cooked chickpeas (or 1 14-oz can, drained and rinsed)
  • 1 ripe avocado
  • 3 tablespoons freshly squeezed lemon juice
  • 1 large garlic clove, minced
  • 1 celery rib, diced
  • 1/4 cup finely chopped pickles
  • 1/4 cup finely chopped dill
  • 2 green onions, finely chopped
  • Whole grain bread, pitas, bagels, or tortillas
  • Lettuce or arugula

Instructions

  1. Mash the chickpeas using a potato masher until broken up but still chunky. Add the avocado and mash until creamy.
  2. Mix in lemon juice, minced garlic, diced celery, dill, pickles, green onions, salt, and pepper until well combined.
  3. Spread the mixture onto slices of your chosen bread and top with lettuce. Close the sandwich and serve immediately.
