  • 1 cup polenta
  • 4 cups vegetable broth
  • 1 tablespoon olive oil
  • 2 cups cherry tomatoes, halved
  • 2 cups fresh spinach
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Toss halved cherry tomatoes with olive oil, garlic, oregano, and basil on a baking sheet. Roast for about 20 minutes until softened.
  2. In a large pot, bring vegetable broth to a boil. Gradually whisk in polenta while stirring constantly. Reduce heat and cook until thickened (about 5-7 minutes).
  3. Stir in salt, pepper, sautéed spinach, and half of the roasted tomatoes into the polenta.
  4. In a greased baking dish, layer half of the polenta mixture followed by some roasted tomatoes. Add the remaining polenta mixture and top with leftover tomatoes.
  5. Bake for 15-20 minutes until bubbly and golden.
