  • 3 lb boneless pot roast (chuck)
  • 3 lbs yellow onions (about 8 medium-large)
  • 2 cloves garlic, finely chopped
  • 1 cup apple vinegar or more beef stock
  • 2 1/2 cups beef stock
  • Fresh rosemary
  • Bay leaf

Instructions

  1. Preheat your Dutch oven over medium heat. Add 1 tablespoon of olive oil.
  2. Season the pot roast with half of the salt and pepper, then sear on all sides until browned (10-12 minutes). Remove from pot.
  3. In the same pot, add remaining olive oil and sliced onions; cook until translucent (about 5 minutes).
  4. Lower heat to medium-low; caramelize onions for 20 minutes, stirring occasionally.
  5. Stir in garlic and maple syrup; cook for another 7-8 minutes until fragrant.
  6. Sprinkle flour over onions; deglaze with apple vinegar and add beef stock.
  7. Return pot roast to pot along with rosemary and bay leaf; bring to a gentle simmer.
  8. Cover tightly and bake in preheated oven at 300°F (150°C) for about three hours until fork-tender.
