- 1 1/2 cups dry red lentils
- 1 large carrot (finely diced)
- 1 small bell pepper
- 1 large onion (chopped)
- 4 cloves garlic (minced)
- 1 heaped tbsp fresh ginger (minced)
- 1/2 tbsp vegetable oil
- 3 cups vegetable broth
- 1 cup canned coconut milk
- 1 1/2 tsp ground cumin
- 1 tbsp curry powder
- 1/2 tbsp sweetener of choice
- 1 tsp ground turmeric
- 1 tsp paprika
- Sea salt and black pepper (to taste)
- 1/3 tsp red pepper flakes (optional)
- Rinse the lentils under cool running water until clear.
- In a pot, heat vegetable oil over medium heat. Sauté chopped onion for about 3-4 minutes until soft.
- Add minced garlic, ginger, carrot, and bell pepper; cook for another minute.
- Stir in rinsed lentils and spices.
- Add vegetable broth and bring to a boil. Reduce heat and simmer for about 10 minutes until lentils are tender.
- Stir in coconut milk and let it cook for an additional 5 minutes to achieve desired thickness.
- Season with salt and pepper to taste.
