  • 1 1/2 cups whole wheat flour
  • 1/2 cup vanilla protein powder
  • 1 tablespoon sugar
  • 2 teaspoons baking powder
  • 1/4 cup applesauce
  • 1/4 cup neutral-flavored oil
  • 1 teaspoon vanilla extract
  • 1/2 cup strawberry jam (or preferred fruit spread)

Instructions

  1. Preheat oven to 170°C/325°F and line a baking tray with parchment paper.
  2. In a bowl, mix flour, protein powder, sugar, and baking powder.
  3. In another bowl, combine applesauce, oil, and vanilla until smooth.
  4. Combine wet and dry ingredients; form into a dough ball and refrigerate for 15 minutes.
  5. Roll out dough between parchment sheets; cut into rectangles.
  6. Place half on the tray, fill with jam, top with remaining rectangles, and seal edges.
  7. Bake for 10-15 minutes until golden brown.
  8. Prepare glaze with confectioners sugar, milk or water, and vanilla; drizzle over cooled pop tarts.
