  • 1/4 cup extra virgin olive oil
  • 1 1/2 pounds boneless skinless chicken breasts or thighs
  • 5 cups shredded lettuce
  • 3/4 cup diced avocado
  • 46 large tortillas
  • 1/2 cup basil pesto
  • 12 cups tzatziki sauce

Instructions

  1. Marinate the chicken by mixing yogurt, olive oil, garlic, smoked paprika, oregano, chili flakes, and salt & pepper in a bowl. Let it sit for at least 15 minutes.
  2. Preheat the oven to 425°F and bake the marinated chicken for about 25 minutes until cooked through. Slice thinly.
  3. In a separate bowl, combine shredded lettuce, avocado, sliced peperoncini, chopped dill, and crumbled feta.
  4. Warm tortillas briefly in the microwave. Spread basil pesto on each tortilla, then layer with salad mix and sliced chicken. Drizzle with tzatziki before rolling up.
