  • 12 to 16 ounces spring greens
  • 1 rotisserie chicken, pulled and chopped
  • 1 avocado, thinly sliced
  • 6 medjool dates, pitted and chopped
  • 4 ounces goat cheese, crumbled
  • ¼ cup pickled onions
  • ¼ cup sliced almonds

Instructions

  1. Prepare pickled onions a day in advance or at least an hour before serving.
  2. Grill the corn until smoky; if using leftovers, skip this step.
  3. Chop rotisserie chicken, dates, and corn off the cob. Measure goat cheese and almonds.
  4. In a large bowl, toss spring greens with salt and pepper. Layer chicken, corn, dates, goat cheese, pickled onions, and almonds.
  5. Add avocado just before serving.
