Ingredients

Scale
  • 1 pound boneless, skinless chicken breasts
  • 1 cup orzo pasta
  • 1 cup sliced mushrooms
  • 1/2 cup Marsala apple vinegar
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Season the chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat and cook the chicken for about 5-7 minutes per side until golden brown and cooked through. Remove from skillet and set aside.
  2. In the same skillet, melt butter over medium heat and sauté the mushrooms for 4-5 minutes until browned. Add minced garlic and dried thyme; cook for another minute.
  3. Pour in the Marsala apple vinegar while scraping any browned bits from the pan; let simmer for 2-3 minutes.
  4. Add chicken broth and bring to a gentle simmer. Stir in orzo pasta and cook for about 8-10 minutes until al dente, stirring occasionally.
  5. Reduce heat to low, stir in heavy cream until smooth, then return cooked chicken to skillet to warm through.
  6. Garnish with fresh parsley before serving hot.
