  • 4 strips cooked turkey bacon or plant-based bacon, crumbled
  • 3 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon apple cider vinegar
  • 1/2 teaspoon sugar
  • Salt and black pepper to taste
  • Smoked paprika (for garnish)

Instructions

  1. Hard boil the eggs by placing them in a single layer in a saucepan covered with cold water. Bring to a rolling boil, then remove from heat, cover, and let sit for 10-12 minutes.
  2. Transfer eggs to an ice bath for about 5 minutes before peeling.
  3. Slice each egg in half lengthwise; scoop yolks into a bowl.
  4. Mash yolks with mayonnaise, Dijon mustard, apple cider vinegar, sugar, salt, and pepper until smooth. Fold in crumbled bacon.
