  • 4 boneless skinless chicken breasts
  • 2 tablespoons yellow mustard
  • 2 tablespoons Dijon mustard
  • 23 tablespoons honey
  • 4 cups romaine lettuce, chopped
  • 1 cup slivered almonds
  • 1 1/2 cups blueberries
  • 1/2 cup dried cranberries or cherries
  • 1/4 cup soy sauce (or tamari or coconut aminos)
  • 2 tablespoons extra virgin olive oil (or avocado oil)
  • 2 teaspoons garlic, minced
  • 1 teaspoon lemon juice
  • 1 teaspoon lemon zest
  • 1/8 teaspoon kosher salt
  • 1/8 teaspoon ground black pepper

Instructions

  1. To make the dressing, mix Greek yogurt, yellow and Dijon mustards, honey, lemon zest, salt, and pepper in a jar or bowl until well combined.
  2. Whisk together soy sauce, olive oil, garlic, lemon juice, lemon zest, salt, and pepper in a bowl. Marinate chicken in this mixture for at least 30 minutes.
  3. Grill marinated chicken over medium heat for about 4-5 minutes per side until cooked through and internal temperature reaches 160°F.
  4. Let the grilled chicken rest for five minutes before slicing.
  5. In serving bowls, layer chopped romaine lettuce followed by sliced grilled chicken, almonds, blueberries, and cranberries. Drizzle with honey mustard dressing before serving.
