  • 4 medium-sized sweet potatoes
  • 1 pound lean ground turkey
  • 2 cloves garlic
  • 1 cup canned diced tomatoes
  • 1 medium zucchini
  • A handful of spinach
  • 1 cup black beans (optional)
  • Shredded cheddar cheese
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon chili powder
  • Salt, to taste
  • Pepper, to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 400°F (200°C). Wash the sweet potatoes, poke holes in them with a fork, coat lightly with oil, salt, and pepper, then bake for about 45 minutes until tender.
  2. While potatoes bake, heat olive oil in a skillet over medium heat. Sauté chopped garlic until fragrant, then add ground turkey along with cumin, paprika, oregano, chili powder, salt, and pepper. Cook until browned.
  3. Stir in diced tomatoes, grated zucchini, spinach, and optional black beans or corn. Let simmer for 5-7 minutes.
  4. Slice baked sweet potatoes lengthwise without cutting all the way through; fluff the insides with a fork. Spoon in the turkey mixture and top with shredded cheese.
  5. Garnish with sliced green onions and serve warm with salsa and plain Greek yogurt.
