  • 4 bell peppers
  • 1 Tbsp olive oil
  • 4 cups fresh spinach
  • 1 tub (15 oz) ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated parmesan cheese
  • ½ cup sliced green onions
  • ½ cup chopped fresh basil
  • Fresh flat-leaf parsley
  • Assorted dried herbs (rosemary, thyme)
  • Salt and pepper to taste
  • 2 large eggs
  • ½ cup breadcrumbs

Instructions

  1. Preheat your oven to 400°F (204°C). Halve the bell peppers lengthwise, removing seeds and ribs. Place cut-side up on a parchment-lined baking sheet and brush with olive oil. Bake for about 20 minutes until softened.
  2. While the peppers roast, microwave the spinach until wilted (15-30 seconds). In a large bowl, mix the wilted spinach with ricotta cheese, mozzarella, parmesan, green onions, basil, parsley, herbs, eggs, breadcrumbs, salt, and pepper.
  3. After roasting the peppers and draining excess water, fill each half generously with the ricotta mixture.
  4. Combine breadcrumbs with one tablespoon of oil in a small bowl and sprinkle over the stuffed peppers.
  5. Return to the oven at 350°F (176°C) for another 30 minutes or until golden brown.
