  • 1 pound boneless skinless chicken breasts
  • 1 small yellow onion
  • 3 cups broccoli florets
  • 1 zucchini
  • 1 small yellow bell pepper
  • 1 small red bell pepper
  • ¼ cup low sodium chicken broth or fruit juice
  • Salt and fresh ground black pepper to taste
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried thyme
  • ½ teaspoon dried rosemary
  • ½ teaspoon paprika
  • ¼ to ½ teaspoon chili powder

Instructions

  1. Cut the chicken into 1-inch pieces and season with salt and pepper.
  2. Combine garlic powder, onion powder, thyme, rosemary, paprika, and chili powder; sprinkle half over the chicken.
  3. Heat a tablespoon of olive oil in a skillet over medium-high heat; cook chicken until browned (6–8 minutes).
  4. Remove chicken; add onions to the skillet and sauté for 2 minutes before adding broccoli, zucchini, and bell peppers. Season as desired and cook until crisp-tender (4–6 minutes).
  5. Deglaze the pan with chicken broth or juice; stir in cooked chicken.
  6. Cook together for another minute on low heat before serving.
