  • 32 ounces frozen cubed hash browns (thawed)
  • ¼ cup unsalted butter (melted)
  • 2 cups sharp cheddar cheese (shredded)
  • 1 ½ cups sour cream
  • 1 small yellow onion (diced)
  • 2 teaspoons garlic (minced)
  • ½ cup chicken broth
  • ¼ cup all-purpose flour
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon cayenne pepper
  • ½ teaspoon dried mustard
  • 2 large yellow onions (thinly sliced for topping)
  • 4 cups vegetable oil

Instructions

  1. Preheat your oven to 350°F.
  2. Spray a 9×13-inch baking dish with nonstick spray.
  3. In a skillet, melt ¼ cup of butter over medium heat and sauté diced onion and minced garlic until translucent.
  4. In a large bowl, combine thawed hash browns, melted butter, cheddar cheese, sour cream, sautéed onions and garlic, chicken broth, flour, salt, black pepper, cayenne pepper, and dried mustard. Mix well.
  5. In another skillet, heat vegetable oil and fry thinly sliced onions until golden brown and crispy; season with salt.
  6. Spread the potato mixture in the prepared dish and top with crispy onions. Bake for about 50 minutes until bubbly and golden.
