  • 1 tsp baking soda
  • 1/2 tsp fine salt
  • 1/2 cup unsalted butter, room temperature
  • 1 3/4 cups granulated sugar
  • 2 large eggs, room temperature
  • 1 1/4 cups buttermilk, room temperature
  • 2/3 cup vegetable or canola oil
  • 2 squirts of green gel food coloring (or 1 Tbsp liquid food coloring)
  • 2 tsp vanilla extract or vanilla bean paste
  • 1 tsp white vinegar
  • 1 1/2 cups unsalted butter, room temperature (for buttercream)
  • 1/2 cup full-fat cream cheese, room temperature
  • 1 Tbsp vanilla extract or vanilla bean paste (for buttercream)
  • 1 tsp fine salt (for buttercream)
  • 8 cups powdered sugar
  • 2 tbsp heavy whipping cream, room temperature

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two round cake pans.
  2. In a bowl, whisk cake flour, cocoa powder, baking soda, and salt.
  3. In another bowl, cream together room-temperature butter and granulated sugar until fluffy. Add eggs one at a time.
  4. Mix buttermilk, vegetable oil, green gel food coloring, vanilla extract, and vinegar in a measuring jug. Combine wet ingredients with the dry ingredients alternately.
  5. Divide the batter between the pans and bake for about 28 minutes or until a toothpick comes out clean.
  6. Allow cakes to cool in pans for 10 minutes before transferring to wire racks.
  7. For the buttercream, beat butter and cream cheese until creamy; gradually add powdered sugar until smooth.
  8. Level the cooled cakes and frost with cream cheese buttercream. Decorate with additional colored frosting as desired.
