  • 1 cup salted butter, room temperature
  • 1 cup granulated sugar
  • 1 egg
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1/3 cup strawberry jam
  • 2 ounces cream cheese
  • 2 cups powdered sugar
  • 1/4 cup hot milk

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a blender, pulverize freeze-dried strawberries into a fine powder.
  3. Cream together the butter, sugar, and vanilla extract in a mixing bowl until light and fluffy. Beat in the egg.
  4. Gradually mix in the flour, baking soda, strawberry powder, and salt. Fold in strawberry jam.
  5. Roll dough into one-inch balls and place them on the baking sheet, leaving space between each cookie.
  6. Bake for about 8 minutes; then tap the baking sheet to flatten cookies slightly and bake for an additional 2–3 minutes until soft.
  7. For icing, whisk cream cheese, powdered sugar, hot milk, vanilla extract, and remaining strawberry powder until smooth. Adjust with more milk if necessary.
  8. Drizzle or dip cooled cookies into icing.
