  • 34 lbs beef chuck roast
  • 1 onion, thinly sliced
  • 3 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 46 hoagie rolls
  • 6 slices provolone cheese

Instructions

  1. Season the beef roast with salt, pepper, garlic powder, onion powder, and dried thyme.
  2. Place sliced onions at the bottom of the slow cooker and add the seasoned roast.
  3. Pour in beef broth, Worcestershire sauce, and soy sauce.
  4. Cover and cook on low for 7-8 hours or high for 4-5 hours until tender.
  5. Remove the beef and shred it with two forks before returning it to the juices.
  6. Toast hoagie rolls under a broiler or in a skillet until golden brown.
  7. Assemble sandwiches by piling shredded beef onto rolls, topping with cheese, and broiling briefly until melted.
  8. Strain cooking liquid to serve as au jus for dipping.
