  • 4 medium-sized sweet potatoes
  • 1 cup fresh cranberries (or frozen)
  • 2 medium apples (Granny Smith or Honeycrisp), chopped
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoons unsalted butter
  • Pinch of salt

Instructions

  1. Preheat your oven to 400°F (200°C). Wash the sweet potatoes thoroughly and poke them with a fork several times. Place them on a baking sheet lined with parchment paper and bake for 45-60 minutes until soft.
  2. Once cooled, slice the sweet potatoes in half lengthwise and scoop out most of the flesh into a bowl. Mix in cranberries, chopped apples, brown sugar, cinnamon, butter, and salt until well combined.
  3. Spoon the mixture back into each sweet potato half and place them on the baking sheet. Bake again at 350°F (175°C) for 20-25 minutes to meld flavors.
  4. Allow to cool slightly before serving.
