  • 1 cup mascarpone cheese
  • ½ cup confectioner’s sugar
  • 1½ tsp vanilla extract
  • ¼ tsp ground cinnamon
  • 23 tsp lemon zest
  • 1 cup whole milk ricotta cheese
  • ¾ cup heavy whipping cream
  • 1⅓ cups mini chocolate chips (divided)

Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, mix vanilla wafer crumbs and brown sugar. Stir in melted butter until combined. Press firmly into a pie dish and bake for about 10 minutes until golden.
  2. In another bowl, beat together mascarpone cheese, confectioner’s sugar, vanilla extract, ground cinnamon, and lemon zest until smooth. Fold in ricotta cheese gently until mixed.
  3. Whip heavy cream in a separate bowl until stiff peaks form; fold into the cheese mixture along with 1 cup of mini chocolate chips.
  4. Pour the filling into the cooled crust and top with remaining chocolate chips. Chill in the refrigerator for at least eight hours or overnight before serving.
