  • 2 large boneless, skinless chicken breasts
  • 2 cups fresh spinach
  • 8 ounces cream cheese
  • 1 cup shredded mozzarella cheese, divided
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut chicken breasts horizontally into four cutlets and pound lightly for even cooking.
  3. Marinate the chicken in olive oil, garlic, Italian seasoning, salt, and pepper for 15-30 minutes.
  4. Sauté spinach in olive oil until wilted (about 2-3 minutes).
  5. Mix cream cheese with sautéed spinach and half of the mozzarella; combine well.
  6. Arrange marinated chicken in a greased baking dish; spread the cream cheese mixture over each piece.
