  • 1 (20 ounce) package refrigerated cheese tortellini
  • 8 ounces cremini mushrooms (sliced)
  • 3 tablespoons butter (divided)
  • 1 tablespoon olive oil
  • 1 tablespoon fresh sage (chopped)
  • 1 clove garlic (minced)
  • 1/2 cup freshly grated parmesan cheese
  • Salt & pepper (to taste)

Instructions

  1. Cook the cheese tortellini according to package instructions (5-7 minutes). Drain and set aside.
  2. While tortellini cooks, prep the mushrooms and chop the sage.
  3. In a skillet over medium-high heat, melt 1 tablespoon of butter with olive oil. Add chopped sage and sauté until crispy (about 1 minute). Remove and set aside.
  4. In the same skillet, add sliced mushrooms and minced garlic along with another tablespoon of butter. Sauté until browned (about 5 minutes).
  5. Combine cooked tortellini with remaining butter, parmesan cheese, and crispy sage in the skillet. Toss to coat and season with salt and pepper. Serve immediately.
