  • 12 oz pasta (any shape)
  • 2 tbsp olive oil
  • 2 large leeks, thinly sliced
  • 2 cups mushrooms (sliced)
  • 3 cloves garlic (minced)
  • 2 tbsp butter
  • ½ cup heavy cream
  • 1 cup Gruyere cheese (shredded)
  • ½ cup vegetable or chicken broth
  • Salt & black pepper (to taste)
  • 1 tsp fresh thyme (chopped)
  • 1 tbsp lemon juice

Instructions

  1. Cook pasta according to package instructions in salted water until al dente. Reserve ½ cup of pasta water before draining.
  2. In a large skillet, heat olive oil over medium heat. Add leeks with a pinch of salt and sauté for about 10–12 minutes until soft and golden.
  3. Add mushrooms and butter; cook for another 5–7 minutes until tender. Stir in garlic and thyme during the last minute.
  4. Pour in broth; simmer for one minute while scraping any browned bits from the pan. Add heavy cream and reduce heat to low.
  5. Gradually stir in Gruyere cheese until melted, adjusting consistency with reserved pasta water as needed. Season with salt, pepper, and lemon juice.
  6. Combine cooked pasta with sauce in the skillet until well coated.
  7. Serve warm, garnished with extra cheese and thyme.
