  • 1 pie crust (9")
  • ¾ cup shredded mozzarella or Monterey Jack cheese
  • 4 oz goat cheese
  • 1 cup sliced onions
  • ¼ cup white grape juice or vegetable stock
  • 1 cup roasted butternut squash
  • 3 large eggs
  • 1½ cups whole milk
  • Salt, pepper, and thyme to taste
  • 2 tbsp butter or olive oil
  • ½ tsp thyme
  • ⅛ tsp nutmeg (preferably freshly grated)

Instructions

  1. Preheat oven to 400°F (200°C). Roll out the pie crust and fit it into a pie plate.
  2. Toss diced butternut squash with olive oil, salt, and pepper on a baking sheet; roast for about 25 minutes.
  3. In a skillet, heat butter or olive oil over medium heat and caramelize sliced onions until golden brown.
  4. In a bowl, combine roasted squash, onions, mozzarella cheese, goat cheese, thyme, salt, pepper, and nutmeg.
  5. In another bowl, whisk eggs and milk together until combined.
  6. Pour the filling mixture into the prepared crust; drizzle egg mixture on top.
  7. Bake for about 40 minutes or until golden and set.
