  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 ripe bananas, mashed (or 3 for stronger banana flavor)
  • 1 cup (125g) all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon cinnamon (optional)
  • ¼ teaspoon salt
  • ½ cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare an 8×8-inch baking pan by lining it with parchment paper.
  2. In a mixing bowl, whisk together melted butter and brown sugar until smooth. Add the egg, vanilla extract, and mashed bananas; mix until well combined.
  3. In a separate bowl, combine flour, baking powder, baking soda, optional cinnamon, and salt. Gradually fold the dry ingredients into the wet mixture until just combined.
  4. If desired, fold in chopped nuts or chocolate chips.
  5. Spread the batter evenly in the prepared pan and bake for 25–30 minutes or until golden brown and a toothpick inserted comes out mostly clean.
  6. Allow to cool before slicing into squares.
