  • 2 cups dried apricots, roughly chopped
  • 1 1/2 cups water
  • 1/2 cup granulated sugar (for filling)
  • 2 tablespoons fresh lemon juice

Instructions

  1. Prepare the apricot filling: In a saucepan, combine chopped dried apricots, water, and sugar. Simmer over medium heat for about 15-20 minutes until tender. Stir in lemon juice and set aside.
  2. Preheat your oven to 375°F (190°C). Grease your baking pan.
  3. Make the crust: In a bowl, whisk together flour, sugar, baking powder, and salt. Cut in cold butter until crumbly.
  4. Combine: Mix in the beaten egg and vanilla until just combined.
  5. Assemble: Press most of the dough into the pan for the crust; reserve some for topping. Spread the cooled apricot filling over the crust and crumble reserved dough on top.
  6. Bake for 30-35 minutes until golden brown. Cool completely before cutting into bars.
