  • 24 ounces full-fat cream cheese
  • 2 large apples (Granny Smith or Gala)
  • 1/2 cup sour cream
  • 1/2 cup unsalted butter (melted)
  • 1/2 cup all-purpose flour
  • 3 large eggs
  • 3 tablespoons brown sugar
  • 1/2 teaspoon cinnamon
  • 2 tablespoons brown sugar for apple filling
  • 1 1/2 teaspoons cinnamon for apple filling
  • 1/2 cup brown sugar for crumble topping
  • 1 teaspoon cinnamon for crumble topping
  • 1/2 cup quick oats
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • boiling water (for the water bath)
  • salted caramel sauce

Instructions

  1. Preheat your oven to 350°F (180°C) and prepare a 9-inch springform pan by wrapping it in tin foil and greasing it.
  2. In a bowl, mix graham crumbs, brown sugar, cinnamon, and melted butter; press into the bottom of the springform pan.
  3. Peel and slice apples; toss with brown sugar and cinnamon.
  4. Mix flour, brown sugar, oats, and melted butter for the crumble topping.
  5. Beat cream cheese until smooth; add sugars, cornstarch, vanilla, sour cream, and eggs one at a time until well combined.
  6. Layer half of the cheesecake filling over the crust, followed by half of the spiced apples. Repeat layers and top with crumble.
  7. Bake in a water bath for about 55 minutes or until set around edges; cool gradually in the oven before chilling.
