  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon salt
  • 4 tablespoons unsalted butter, melted (for coating)
  • 2 tablespoons apple cider (for coating)
  • ¾ cup granulated sugar (for coating)
  • 2 teaspoons ground cinnamon (for coating)
  • 1 cup powdered sugar (for glaze)
  • ½ teaspoon vanilla extract (for glaze)
  • 12 tablespoons apple cider (for glaze)

Instructions

  1. Reduce the apple cider in a saucepan over medium-high heat until concentrated.
  2. Brown the butter in another saucepan over low heat until lightly toasted, then cool.
  3. Whisk together flour, baking powder, baking soda, cornstarch, spices, and salt in a bowl.
  4. In a large bowl, mix cooled brown butter and sugars until smooth; add egg, reduced cider, and vanilla.
  5. Combine wet and dry ingredients gently; let dough rest while preheating oven to 375°F (190°C).
  6. Scoop dough onto lined baking sheets; bake for 9-11 minutes until edges are set.
  7. Cool slightly before coating in cinnamon sugar.
